The bouquet is a complex symphony of vanilla, lemon blossom, honey, and white spring flowers. The palate is bright and focused with delectable flavors of fresh croissant, lemon zest and wet river rocks, leaving a lingering finish with a kiss of oak.
Hand-harvested over four seperate passes in a ten day window at the cool of the night to preserve those delicate flavors and aromas. As soon as the grapes arrive in the winery the fruit is whole cluster pressed and quickly put into tank to capture the balance and complexity in those delicate juices. The juice is then fermented in a combination of French oak barrelsas well as a portion fermented in tank. The wine was aged "sur lie" (in contact with lees), in barrel for 6 months.
